Ingredients
1 can Stokes Green Chile Sauce Pork Ranchero
1 lb chorizo
8 tortillas or tostadas
2 cups black beans
1 bell pepper
1 onion
1 large tomato
8 oz queso fresco
8 eggs

In a large frying pan with cooking spray, cook chorizo over medium high heat until browned and crumbled. As the chorizo cooks, in another pan cook the black beans until warm.

Combine browned chorizo, 2 cups cooked black beans and 3/4 can of Stokes Green Chile Sauce.

Sauté thinly sliced pepper and onion. As the pepper and onions sauté, begin to cook your fried eggs.

Layer chorizo, beans, sliced tomato, onion and pepper on tortilla.

Top with fried egg, queso fresco, and remaining Stokes Green Chile Sauce Pork Ranchero.
